Add sliced pepper, onion and mushroom to grill pan and grill until tender

Mix together cottage cheese and chipotle seasoning

Lay tortilla flat on grill

Spread half with cottage cheese, veggies and then top with cheddar cheese

Cook opened with grill cover down for 2 minutes

Fold tortilla over and flip (gently)

Cook another 1-2 minutes or until cheese is melted

Slice and serve with salsa
*A low carb tortilla will not crisp and firm up as well as a regular or P28 tortilla
