Mouth Watering Dark Chocolate Cherry Protein Pancakes Recipe

Instructions

  1. Whisk together oat flour, coconut flour, protein powder and baking powder.
  2. In a second bowl mix together egg whites, greek yogurt, extracts and sweetener.
  3. Combine wet and dry ingredients.
  4. Stir in 2 tbsp. mini dark chocolate chips and 2 tbsp. chopped dark cherries (or more if you’re feeling adventurous!).
  5. Coat skillet with oil or non stick spray.
  6. Heat pan over medium heat.
  7. Spoon batter into heated skillet.
  8. Cook until small bubbles begin to form.
  9. Flip and cook for an additional 1-1.5 minutes.
  10. Repeat until all batter is cooked.
  11. Melt remaining dark chocolate.
  12. Drizzle over pancakes.
  13. Finish off with remaining chopped cherries.

*I used 10 drop liquid stevia. However, this amount will vary based on personal preference and sweetness of protein powder used.
