Sift together coconut flour, protein powder, baking powder and salt

Whisk together melted coconut oil, egg, vanilla and honey

Combine wet and dry ingredients

Mix until just incorporated

Cover and place in the refrigerator for 20 minutes

Preheat oven to 325 degrees F

Line a baking sheet with parchment paper

In a small bowl mix together cinnamon and xylitol, if desired

Shape dough into balls (about 1.5 tbs size)

Roll in cinnamon/xylitol mixture, if using

Place cookies on baking sheet

Flatten cookie into desired shape

Bake for ~10 minutes

Remove from oven and allow to cool
Notes:
*If you do not have snickerdoodle protein powder, you can sub with vanilla + 2 tsp ground cinnamon
