Blueberry Mug Cake Recipe With FitMiss Vanilla Chai

Instructions

  1. With a hand mixer, blend all your ingredients except the blueberries. Blend until smooth for about 10-15 seconds,
  2. Spray a bowl with non-stick oil, pour in your batter.
  3. Stir in blueberries.
  4. Top with plastic wrap or a damp paper towel.
  5. Microwave for 2 minutes. (Meanwhile make frosting)
  6. Pour frosting over cake.
Frosting ingredients
  • 1/3 cup plain non-fat Greek yogurt
  • 1 packet of Stevia
  • 1/2 tsp lemon extract (or 1 tsp lemon juice)
